The recipe here is pretty much the same, just outlined in an easier way to understand. Back when I first came up with this, I spent a lot of time figuring out the ratios to get the 1+1 = 1% increase, and I shared as much as I could in the first video, which just complicated things for most people. The overall inspiration for this was for someone at home or someone who was workshopping a single cocktail to be able to acid-adjust that drink in real time and easily, where they could repeat the step in the future. While drops and dashes of acid solutions have been a thing before, I wanted to make sure that if you used this method it would be easily repeatable. That way if you did want to adjust a large batch of juice, you would know how much you had increased per cocktail and could scale it up without worrying that you may have done it wrong. A better question would by "why would there be?" The process is relatively new, and most sources for fruit acidity online are academic where they were trying to determine that acidity for a specific reason. Below are some acid level resources that I can't necessarily guarantee are accurate, not to mention that the acidity of your fruit might be different then another of the same variety *How it works:* Take 1 mL of the solution and add to 1 oz (or 30 ml) of juice. Your juice has now increased its acidity by 1% *In 1 oz of Juice/Liquid* 1 mL solution = +1% acidity 2 mL solution = +2% acidity 3 mL solution = +3% acidity 4 mL solution = +4% acidity 5 mL solution = +5% acidity 6 mL solution = +6% acidity π *Fruit Juice Acidity Levels* π *These are estimates sourced from a wide range of sources* Lime: 6% (made of citric and malic acid at a ratio of 2:1) Lemons: 6% (mainly citric acid) Grapefruit: 1.5 -2% Pineapple: 0.5-1% Oranges: 0.5-1% Remember that different juices will have different sugar/brix as well as bitterness, so subbing in the EXACT acidity of a lime in grapefruit juice will not necessarily lead to a final drink with the same sweetness, bitterness, and acidity.
