Spread: don’t add, sauce: add) salt + pepper to taste Chickpea and tofu patties cups chickpeas 1/2 cup chickpea flour 180g Tofu 1/2 Lemon juice 3 tbsp Olive oil 1 tsp Smoked paprika 2 tsp Garlic 1 Onion, diced Salt n pepper to taste 2 cloves of Garlic, grated 1 tsp Curry powder 1 big handful of fresh parsley In a food processor, pulse until its well combined but do not overmix! Around 15-20 sec pulsing. If you don't have a food processor, mash the chickpeas and tofu with a fork. Cut up the onions and parsley finely. Add the grated garlic, spices, lemons juice and olive oil. Form it into equal sized balls, place them onto a parchment line baking sheet and flatten them with you hands. Bake at 180 Celsius for 20min each side Crepe cake 3 cups whole grain flour 2 cups all purpose flour 3 tbsp corn starch 2 tbsp vanilla sugar Pinch of salt 2.5 cups Oat milk 3.5 cups Sparkling water 1/3 cup Sunflower oil Let the batter sit for at least 15 minutes before frying. Fry them on medium heat (around 30-45 sec each side) in an oiled pan. Sometimes the first few don’t turn out perfectly, if the pan is not heated enough. Just keep going if it happens For the cake, use whatever jam you love, fruits, and you can use the vegan cream cheese with it! (recipe down below) Vegan creamcheese: “sweet version” block of firm tofu 2 tsp cinnamon 1 tbsp agave/maple syrup 1 lemon’s zest ½ lemon’s juice ½ cup coconut yoghurt Blend it in a food processor til “fluffy” If you want to add this to the crepe cake: add some vegan whipping cream to the mix to make it lighter Chocolate nice cream: 2 frozen bananas ½ cup frozen raspberries 2 tbsp cocoa powder 1 tbsp chia seeds or flaxseeds 2 tbsp smooth natural peanut butter 1 tsp maca (optional, good for hormonal balance) ¼ cup coconut yoghurt (gut health) optional scoop of vegan protein powder (to make it more filling) ¼ cup oats (to make it more filling) ¼ cup oat milk to blend Mushrooms on toast: https://www.instagram.com/p/CtL7gSpqT1-/ Choc chia seed pudding: https://www.instagram.com/p/CtHBgSWqeM-/ #whatieatinaweek #vegan #fullweekofeating Chapters: 00:00 day 1 05:03 day 2 10:45 day 3 14:11 day 4 18:23 day 5 sub count: 10571 lovely people..THANK YOU!!
