Stock Showdown: Homemade vs. Roli Roti Brand Taste Test and Cost/Time Comparison 00:00 Intro 01:45 Understanding Gelatine 03:21 Viscosity Comparison 04:16 Flavor Comparison 06:36 Chicken vs Beef Roli Roti Stock 07:02 Time & Cost Comparison 08:00 The Waste Problem 09:28 Should You Make Stock? 09:57 Stock vs Broth Here are the assumptions I made when calculating the cost and time: Homemade from scratch: Here is how I make it: https://youtu.be/4OjBy0Z6U38 2 chickens at $3/lb = $27 Vegetables and aromatics = $5 Total $32 minus $20 (the breasts) = $12 ($0.75/cup) 1 hour to cut up the chickens and veggies 1 hour to roast, deglaze the pan, and get stuff in the pot 5 hours - bring to a boil and simmer 30 min to strain and degrease 2 hours to reduce 30 min to store and wash dishes 3 active hours (11 min per cup), 10 total (37 min per cup) Homemade from rotisserie chickens: 2 chickens at $8/each = $16 (this is the price at Whole Foods. They are small, but I include the breast in the stock since it’s too dry to use for anything else). Vegetables and aromatics = $4 (we don’t need as many veggies since we are aren’t roasting the chicken) Total $20 ($1.25/cup) 15 minutes to get stuff in the pot 5 hours - bring to a boil and simmer 2 hours to reduce 30 min to strain and degrease 15 min to wash dishes 1 active hour (4 min/cup), 8 total (30 min per cup) Store bought: $7 for 3 cups ($2.30/cup) Support my channel https://www.patreon.com/helenrennie My cooking classes in the Boston area: http://www.helenrennie.com FACEBOOK: https://www.facebook.com/HelensKitchenCooking/ INSTAGRAM: https://www.instagram.com/helen.rennie
