Let’s get cooking! **Ingredients:** - 2 oz cream cheese - 2 eggs - 1/2 teaspoon cinnamon (or your favorite spice: apple pie spice, pumpkin pie spice, etc.) - 1 packet Splenda (I use Splenda with stevia, but you can use your preferred sweetener) **Instructions:** 1. Measure out 2 oz of cream cheese and place it in a bowl. 2. Add the two eggs to the bowl. 3. Sprinkle in 1/2 teaspoon of cinnamon (or your preferred spice). 4. Add 1 packet of Splenda (or your choice of sweetener). 5. Blend everything together until smooth. You can use a regular blender or, like me, an immersion blender. 6. Let the batter sit for 2-3 minutes to allow the bubbles to settle. 7. Preheat a pan on medium heat. 8. Pour 1/4 cup of batter into the pan for each pancake (the recipe makes about 4 pancakes). 9.
