In this video, I’m sharing my second attempt at creating keto-friendly grits! As a Southern boy, grits were a breakfast staple for me, often paired with eggs and sausage. Since starting keto, I've been looking for tasty low-carb alternatives, and this baby corn “grits” recipe hits the spot! Join me in the kitchen as we make a creamy, cheesy, and budget-friendly version of grits using common ingredients for a simple keto breakfast that anyone can whip up. 👨🍳 Recipe Ingredients: 1 can of baby corn, rinsed and drained 1/2 cup chicken broth 1 cup heavy whipping cream 1/4 teaspoon garlic powder 1/4 teaspoon onion powder Salt and pepper to taste 1 cup shredded cheddar cheese 2 tablespoons butter (optional: add more for a richer taste) Instructions: Prepare the Corn: Rinse and drain the baby corn, then blend in a food processor or blender until it reaches a gritty, “grits-like” consistency. Cook the Base: In a saucepan, combine the heavy cream and chicken broth, then bring to a gentle simmer. Add the Corn and Seasonings: Lower the heat slightly, then add the blended baby corn along with the garlic powder, onion powder, salt, and pepper. Stir well. Simmer: Let the mixture cook for 5-7 minutes (mine took around 20 minutes). Finish with Butter and Cheese: Stir in the butter and shredded cheddar cheese, allowing everything to melt together until creamy and smooth. Serve and Enjoy: Spoon into a bowl and garnish with extra cheese, jalapeños, or your favorite toppings. Enjoy as a side with eggs, sausage, or shrimp!
