Vacation mode activated! Last week, my wife and I enjoyed a relaxing getaway in the mountains of North Carolina. Staying on my keto journey during vacations is always a challenge, but we made it work. We chose to stay in a VRBO home because of our dog, and having a kitchen to prepare meals was a big plus. This cabin also had a grill, which I loved. I spent the week grilling my favorite meats for dinner and kept the sides simple. For breakfast each day, I made eggs and sausage omelets. Before leaving for the trip, I prepared chaffles, which came in handy on our first night. Instead of cooking, we went to Burger King, where I ordered a Bacon King with no ketchup and swapped the bun for my chaffles—it turned out great!
