It's a quick light meal that's packed with flavor. The gremolata is one of those versatile sauces that is packed with flavor and goes great on fish, steak, veggies or even add it to a minestrone soup. Check out my filet video here: https://www.youtube.com/watch?v=BctAfi6fTqk Cauliflower Puree 2c cauliflower florets 3T Olive oil 1c vegetable stock salt In a medium sauce over medium heat, add the olive oil and cauliflower. Cook the cauliflower 5 minutes, stirring occasionally being careful not to caramelize the cauliflower. Add the vegetable stock and let simmer for 5-10 minutes, or until the cauliflower is tender. Put the cooked cauliflower in the blender, reserving the liquid. Puree until smooth. Add some of the reserved vegetable stock to adjust the consistency of the puree. Adjust seasoning with salt. Sautéed Cauliflower & Brussels Sprouts 1c orange cauliflower, florets 1c white cauliflower, florets 1c Brussels sprouts, julienne 3ea garlic cloves, smashed 3T olive oil Salt Pepper In a large sauté pan over medium high heat, add the olive oil and garlic and cook until it starts to caramelize. Next, add both cauliflowers. Cook stirring occasionally for 4 minutes. Next, add the Brussels sprouts and season with salt and pepper. Continue cooking until the cauliflower is almost tender. Once it is cooked, remove from the pan. Gremolata 4ea garlic cloves 1c Italian parsley leaves 1ea thyme sprig 1tsp orange zest 1tsp lemon zest 1/2tsp chili flake 1tsp rosemary 1/2c olive oil Salt pepper In a mortar and pestle, add garlic, salt, pepper, parsley, thyme, rosemary, lemon & orange zest. Mix until a paste starts to form. Add the olive oil and mix. Adjust the seasoning. Cooking the fish In a large sauté pan over medium heat, add olive oil. The oil should be hot, but not smoking. Pat the skin of the fish dry with a paper towel and lightly coat in olive oil. Season the flesh of the fish with salt and pepper. Place the fish into the pan skin side down. The fish will curl up when it hits the hot oil. This is due to the proteins in the fish tightening. Let it cook like this for 1 minute to let the protein relax. Using a fish spatula, gently push down on the flesh side of the fish so the rest of the skin is cooking in the hot oil. Cook for 3-4 minutes on the skin side. The sides of the fish will start to turn white. Once this happens you can turn the fish over and cook for 1 minute. Remove the fish from the pan and place on a clean paper towel. *you can baste the fish with butter, garlic and thyme if you want.
