French Style Omelette Quick and easy omelette 3 Eggs 4 Cremini mushrooms 4 Asparagus 16 Spinach leaves 3Tbsp Boursin Cheese 3Tbsp Butter Salt & Pepper In a small pan over medium heat add 2T and melt. Add the mushrooms, season with salt and pepper. Cook until golden brown. Add the asparagus and cook until tender. Add the spinach and cook until wilted. Set aside. In a mixing bowl add your eggs and whisk until there are no streaks of egg whites. In a 10inch non stick pan over low heat. Add 1T butter and melt. Add the eggs and mix with a rubber spatula. Keep mixing your eggs and going around the side of the pan. Break up any big chunks of eggs. Keep doing this until your eggs are cooked halfway. Once your eggs are cooked halfway, stop mixing and let the eggs finish cooking. If the pan gets too hot, remove the pan from the heat. Now that your eggs are cooked, add the veggie mix to the eggs and crumble your cheese. Fold the eggs on top of the filling. Roll the egg out of the pan and onto a plate. Place a little of the veggie mix and a crumble of cheese on top of the omelette. Enjoy!!
