Egg Free Pasta Recipe - Fresh Homemade and Handmade Semolina Gnocchetti Pasta Recipe: Serves 2-4 people For the pasta dough: 200g Semolina Flour 125g Water Make a well with the semolina flour on your cutting board and add the water to the well. Mix the semolina into the water to make a paste, then use a bench scraper to mix the rest of the semolina in. Knead the dough for about a minute. Place in a bowl and cover with plastic wrap. Let sit for 20 minutes. Cut the dough in 3 or 4 pieces and roll out into a long cigar about the thickness of your finger. Next cut into pieces about the width of your pinky. Roll on a gnocchi board. Toss the gnocchetti with semolina flour to prevent them from sticking to each other. To cook the pasta, bring a pot of lightly salted water to a boil and add the gnocchetti. Add the gnocchetti and stir to help the pasta to not stick to each other. Once done add to the sauce. Broccoli and Blistered Cherry Tomato Sauce 4T Olive Oil 1.5c broccoli florets, small 2c cherry tomatoes 8ea garlic cloves smashed 6ea basil leaves 1cup chicken stock 3Tbsp unsalted butter 1tsp chili flakes 1Tbsp lemon juice (or ¼ of a fresh lemon) Kosher salt Black Pepper Parmesan cheese In a sauté pan over medium heat add the olive oil and smashed garlic cloves. Cook until the garlic is caramelized, then remove the garlic from the pan. Next add your cherry tomatoes and cook over medium high heat. You want the pan to be hot enough to lightly smoke and char the cherry tomatoes. Add your broccoli and cook for 1 minute, then add your basil leaves to the oil in the pan, Add 2Tbsp of butter to the pan and cook for 1 minute. Next add the chicken stock, chili flake, salt, pepper and lemon juice. Simmer for 1-2 minutes or until a pan sauce has started to form. Add the cooked pasta and simmer in the sauce for another minute. Grate in fresh Parmesan cheese and adjust your seasoning. Plate your pasta and finish the pasta with fresh grated Parmesan cheese.
