Whisk together until there are no lumps. Add the egg and whisk for 1 minute or until most of the sugar is dissolved. Mix the baking soda with the flour then fold into the sugar mixture. Add the flour to the sugar mixture and fold gently with a spatula until the flour is incorporated. Be careful not to over mix the dough. This will activate the gluten which would make the cookie cakey. Portion the dough into 16 balls ( 50 grams). Bake for 11-14 minutes.
