Fall’s setting in, and this is my final green bean harvest of the year. Most gardeners pull their bean plants out, but that’s a common mistake — those roots still have work to do. In this video, I’ll show why I leave them in the ground and how I preserve the last harvest by blanching, cooling, and vacuum-sealing for winter.
