The cocktail is a lovely combination of anise, honey and apple with tangy ginger. INGREDIENTS 2 barspoons honey 30 ml/1 oz. Absinthe 30 ml/1 oz. apple juice Top with Ginger Ale METHOD 1. Stir the honey with the Absinthe in base of shaker until the honey dissolves. 2. Add apple juice and shake with ice. 3. Strain into ice-filled glass. 4. Top with Ginger Ale and stir briefly. 5. Garnish with a mint sprig.
