This hearty recipe of vegetable beef soup in the Instant Pot is sure to please your taste buds. Watch for step by step instructions. If you have a 6 quart Instant Pot, I have suggestions as to how to make this recipe below the 8 quart instructions. Vegetable Beef Soup (for 8 quart Instant Pot) 1 1/2 to 2 lbs. of beef diced into bite size pieces (can use stew beef) Lightly salt & pepper the beef 8 cups of beef broth ( I use boiling hot water and add 1 tsp of Better Than Bouillon per cup of water) 2 to 3 tbsp grapeseed oil 1 diced onion 3 celery stalks diced 1 (8 oz) bag of baby carrots diced 5 medium red potatoes 1 tbsp minced garlic 2 (14 oz) of diced tomatoes 1 (28 oz) can of crushed tomatoes 3 tsp Worcestershire sauce 2 tsp Italian seasoning 1 tsp no salt seasoning (I get mine at Costco) 1 (12 oz) bag of peas 1 (8 oz) of white mushrooms diced and sauted in 2 1/2 tbsp of butter *You may want to add more salt & pepper after it's cooked. Directions: Select Saute on the Instant Pot. Place 2 to 3 tbsp of Grapeseed oil in pot. When pot reads "Hot" place meat in pan. Lightly salt & pepper the meat. Stir meat around until it's brown on all sides. Turn Instant Pot off and then on Pressure Cook High for 15 minutes. Now add all ingredients except for mushrooms and peas. Place lid on and make sure you close the sealing valve. Allow pot to cook for 15 minutes and then do a 10 minute self release. (While pot is cooking you can saute your mushrooms.) Now do a quick release. Turn Instant Pot off. Add sauteed mushrooms and peas to your soup. (I use frozen peas and rinse them in warm water before placing in Instant Pot.) Stir. Now turn Instant Pot on Saute mode and allow peas and mushrooms to heat up for 3 to 4 minutes. Enjoy! * Can serve with fresh warm bread or crackers. *** If you have a 6 oz Instant Pot you can decrease everything a little. Only put 14 oz of crushed tomatoes, remove liquid from diced tomatoes before placing in pot, only use 2 tsp of Worcestershire sauce, and use 4 medium potatoes instead of 5. Use 3/4 bag of baby carrots diced instead of whole bag. Use 2 celery stalks diced instead of 3.
