Pineapple Casserole is an easy Southern recipe that is easy to put together and tastes amazing. If you love pineapple, you are sure to love this recipe. Watch to see just how simple it is to make. Pineapple Casserole 2 – 20 oz. cans of chunk pineapple 1 – 20 oz can of crushed pineapple (do not drain juice) Drain juice from 2 cans of chunk pineapple Spray casserole dish with butter flavored cooking spray Place all three cans of pineapple into bottom of dish Add about ¼ cup of juice Mix 5 tbsp of flour into ¾ cup of sugar Sprinkle over pineapple Grate 1 cup of sharp cheddar cheese Spread cheese over pineapple mixture Crumble 1 stack of Ritz crackers Place crumbs over mixture Melt 6 tbsp of unsalted butter and pour over mixture Bake in oven at 350º for 25 to 35 minutes until lightly brown. Allow casserole to sit for 10 minutes before serving. Enjoy! *You can replace ¾ cup of sugar with ¾ cup of organic coconut sugar. *You can use gluten free flour too.
