Quinoa Veggie Chicken Stir-Fry (Electric Skillet) The Ginger Optimist Ingredients: 2 cups shredded rotisserie chicken 1–2 tbsp grape seed oil or avocado oil 1 cup mushrooms, sliced 2 cups broccoli florets 1 tbsp fresh ginger, minced 1 tbsp fresh turmeric, minced (or 1 tsp ground turmeric) 3 tbsp sun-dried tomatoes, chopped (oil-packed or rehydrated if dried) 2 tbsp low-sodium soy sauce or coconut aminos 2 cups cooked quinoa (prepare ahead or use pre-cooked) Optional: a splash of chicken broth or water Salt and pepper to taste *Optional: Red pepper flakes for heat *Optional garnish: green onions, pine nuts, cashews or a squeeze of lemon Instructions: Preheat your electric skillet to 350°F. Add oil to the skillet. Once hot, sauté the ginger and turmeric for about 1 minute until aromatic. Add the mushrooms and broccoli. Stir-fry for 4–5 minutes until tender-crisp, adding a splash of water or broth if needed. Stir in the shredded chicken and sun-dried tomatoes. Cook for 3–4 minutes until warmed through. Add the cooked quinoa and soy sauce. Mix everything well so the flavors soak into the quinoa. Taste and adjust seasonings. Add salt, pepper, or red pepper flakes as desired.
