If you love PAYDAY bars but would prefer a healthier version, you are going to love this quick and easy recipe! This is my own recipe and I am quite pleased with it. Check it out! :) Healthy PAYDAY Bars Recipe: 13 medjool dates 1/2 cup of almond flour 2 tbsp of organic coconut oil 1 tsp of vanilla extract kosher salt 2 cups of unsalted peanuts Directions: Soak dates in warm water for a few minutes to make removal of pits easier. Remove pits. Add dates, coconut oil, almond flour, and vanilla extract to your Ninja or strong blender or food processor. Blend until smooth. It took about 30 to 45 seconds in my Ninja. Spoon onto parchment paper on a cookie sheet and form into a bar shape. Lightly sprinkle kosher salt on top. Place peanuts on top and gently press into the bar. Carefully turn the bar over. Lightly sprinkle kosher salt on this side. Place peanuts on this side and gently press into the bar. Put the PAYDAY bar in the freezer for 30 to 60 minutes. After it is pretty solid you can slice it into little bars. Keep bars in the freezer. Enjoy!
