Put thin slices through the inside almost down to the core (cross-hatching). Put olive oil on eggplant A lite sprinkle of salt A lot of Italian seasoning (I used approximately 1 tsp per half) Fry at 400° for 8 minutes. (Make sure it’s soft when it comes out.) Put marinara sauce over the top Cover top with mozzarella cheese Sprinkle Parmesan cheese on top Fry for 3 to 4 minutes until it’s light bubbly brown. *You can use Panko bread crumbs on top if you like. *You can add cooked/seasoned ground beef or turkey if you like.
