Easy hotel omelette made for flight attendants, traveling nurses, and anyone who needs simple food they can pack and cook while traveling. This on-the-go omelette is cooked in a mini skillet and uses basic ingredients you can take with you and make right in your hotel room. Recipe for fresh ingredients: 2 large eggs 2 tbsp Shredded cheese 2–3 tablespoons chopped onion 1–2 teaspoons chopped bell pepper (any color) Salt and pepper to taste 1 teaspoon butter or oil *If you do like I did, you will premix all your ingredients and pour them into the breast milk bag and freeze. You can use the frozen pouch like an ice pack in your lunch box. Instructions Preheat MyMini – Turn it on to medium heat. Add butter or oil and let it melt. Sauté the veggies – Add onions and peppers. Cook 1–2 minutes until soft and fragrant. Stir occasionally. Beat the eggs – While the veggies cook, beat the eggs in a small bowl with a pinch of salt and pepper. Add eggs to skillet – Pour the beaten eggs over the sautéed veggies. Tilt the skillet slightly to let the eggs spread evenly. Cook gently – Let the eggs cook undisturbed for 1–2 minutes, then gently stir or fold the edges toward the center. Finish – When eggs are mostly set but slightly soft on top, you can either fold it in half or leave it open. Turn off heat and let residual heat finish cooking for 30–60 seconds. Serve – Slide it out with a small spatula. Enjoy immediately!
