Instant Pot Rotisserie Chicken Noodle Soup Ingredients 2 cups shredded rotisserie chicken Several baby carrots, sliced or use 3 or 4 whole carrots sliced 2–3 celery stalks, sliced 1 medium onion, diced 3–4 cloves garlic, minced (optional) 6 cups chicken broth 2 cups dry egg noodles 1–2 tsp Italian seasoning (or thyme + parsley) Salt & pepper to taste 1–2 tbsp olive oil or butter Instructions 1. Sauté the veggies Press Sauté on the Instant Pot. Add oil/butter, onions, carrots, and celery. Cook 3 minutes until softened. Add garlic (if using) for 30 seconds. 2. Add broth and seasoning Pour in chicken broth. Add Italian seasoning, salt, and pepper. Stir well. 3. Add chicken. Stir in the shredded rotisserie chicken. 4. Pressure cook. Press Cancel to stop sautéing. Seal the lid. Set Instant Pot to Manual/Pressure Cook – 5 minutes. 5. Quick release. When the timer ends, perform a quick release. 6. Add noodles. Remove the lid. Press Sauté again. Add dry egg noodles. Cook 5–7 minutes, stirring occasionally, until noodles are tender. 7. Adjust seasoning. Taste and add more salt, pepper, or herbs if desired. 8. Optional finishing touches. A squeeze of lemon. Fresh parsley A touch of cream for richness *If you use egg noodles, they tend to soak up the liquid.
