Chicken Tortilla Soup in the Instant Pot

Recipe: Chicken Tortilla Soup (Instant Pot) by The Ginger Optimist Cook 4 to 5 boneless skinless chicken breasts filleted in the instant pot with one diced onion, ½ tsp black pepper, ½ tsp garlic powder, ½ tsp salt, and 6 cups of water on pressure cook high for 6 minutes then do a quick release. Remove chicken and either pull it apart or cut it into bite size pieces. Add back to the pot. Mix in a large bowl while chicken is cooking: 4 to 5 boneless skinless chicken breasts 1 diced onion 4 cans of organic black beans 2 cans of Chilli Fixin's Rotel 1 1/2 tbsp of Cumin 1 tsp of Italian seasoning 1 to 3 tablespoons of chopped jalepenos (you decide) 1 can of cream of chicken soup 2 cans organic diced tomatoes & tsp Italian seasoning *in the video I say one can of diced tomatoes but I prefer two cans. *one bag of sweet corn is optional Lime juice approximately ½ tsp Add the mixture to the instant pot. Cook for 6 minutes, do a 10 minute natural release and then a quick release. Add shredded cheddar cheese or mozzarella cheese. Put a spoonful of sour cream or plain Greek yogurt on top. A few slices of avocado. A little sprinkle of chopped cilantro. (optional) Crush tortilla chips in the bowl.
