Cast Iron Skillet Chicken Dinner is a one pan meal that is super easy to make and delicious. Watch for step by step instructions. 0:00 Intro 0:30 Mix olive oil/seasonings 1:12 Add chicken to olive oil/seasonings 1: 28 Add diced potatoes to olive oil/seasoning 1:44 Add onions & peppers 1:57 Spread veggies around in skillet 2:04 Put skillet in oven 2:16 Check on chicken 2:22 Make sure chicken juices run clear 2: 35 Taste test RECIPE: 2 chicken thigh/legs 2 diced potatoes (wash thoroughly and leave skins on) 1 diced bell pepper 1 onion sliced into thin pieces 1/2 cup of olive oil 2 tsp Greek seasoning 2 tsp garlic powder 2 tsp paprika Preheat oven to 400°. Rinse chicken legs/thighs and pat dry. Lightly salt both sides of chicken. Add olive oil and seasoning to a gallon size bag. Mix up seasoning in oil. Now place chicken in bag and massage oil/seasonings over chicken. Place chicken in skillet. Add diced potatoes to bag and massage into potatoes. Add potatoes to skillet. Place around the chicken. Now add onions and bell pepper to the bag. (If needed you can add a little more olive oil to bag.) Massage oil/seasonings over onions and peppers. Add to skillet. Cook in oven for 1 hour. If you like your chicken and potatoes crispier, you can cook for an extra 20 to 30 minutes. Keep an eye on it though. Enjoy!
