In this live Garden Grounds Q&A, I focus on getting your cool-weather crops started indoors the right way—so you’re not rushing plants outside just because they can “take a frost.” I’m in Maryland Zone 7, and my main point is simple: cool crops like kale, collards, broccoli, cauliflower, Brussels sprouts, cabbage (including napa/Asian types), and bok choy can handle cold, but they won’t thrive if you transplant them into soil that’s still too cold. I aim for when the top few inches of soil are around 50°F and nights are regularly in the low 50s with only occasional dips into the low 40s. I also cover practical indoor seed-starting basics: white LED shop lights work great, I run them 16 hours on and 8 hours off with a timer, and for brassicas I skip the heat mat because warmth can make them grow fast, tall, and a little floppy. I show examples of 12-day seedlings and 3-week collards, talk about thinning (I plant 3 seeds and keep the best one), and explain why I’d rather grow a solid 6-week transplant with good roots than overgrow a 10-week plant that just sits in cold ground.
