In this video I’m reusing some really useful seed-starting footage to show you exactly what you can start indoors in late winter—cool weather vegetables plus perennial herbs and flowers. The big takeaway is timing: most cool crops only want about 6–8 weeks indoors after germination, and they need to go into soil that’s warming up (I’m looking for about 50°F in the top 2–4 inches). If you start too early or transplant into cold soil, they just sit there and don’t grow, even though they can handle frost. I walk you through real planting examples and what seedlings look like at about 2 1/2 weeks, plus the practical stuff that makes or breaks seed starting: why cell size matters (small cells dry fast and roots coil), how I bottom water, when I thin to one plant, and when I give the first light water-soluble feeding. I also cover grow light timing (I run 14 hours on, 10 off) and how to correctly pack your starting mix so seeds have a solid base. Finally, I show you why peas are different—germinate them indoors, but get them outside at about the 2-week mark—and I explain acclimation so your seedlings don’t get sunburned and die when they hit the real world.
