Marinate chicken with grapeseed oil, soy sauce, vinegar, rice wine. Trim off extra fat. 2. Heat up pan and add grapeseed oil. Cook the chicken to about half cooked. Set aside. 3. Cook garlic, ginger, and green onion until fragrant. Add chili oil. 4. Add the chicken back into the pan. Let it cook for a few minutes, then add 2-3 tsp of sugar. Continue to toss the chicken.
