Saundra's Biscuit Recipe: Freezer Biscuits Ingredients 2 1/4 cups all-purpose flour 3 tsp baking powder 1/2 tsp salt 1/2 cup cold butter, cut into chunks 1 cup buttermilk or soured whole milk (If you don't have buttermilk, add a tbsp of lemon juice to whole milk) Instructions In a food processor, blend the flour, salt and baking powder. Pulse in the cold butter pieces. Remove mixture from the food processor into a large mixing bowl and make a well in the center. Pour in the buttermilk and mix just until the flour is incorporated, do not over mix. Drop the sticky dough onto a well-floured countertop. Sprinkle the top of the dough with additional flour as well as flouring your hands to handle the dough. Knead a couple of times and pat out to 1” thick. Cut the dough into rounds using a biscuit cutter or hand chopper. Place biscuits onto a cookie sheet covered with parchment paper. Freeze biscuits overnight on cookie sheet. Remove from cookie sheet and store in an airtight container in the freezer. To bake: Place biscuits on a greased cookie sheet. Paint tops of biscuits with melted butter. Bake for 10-15 minutes until evenly golden brown in a 425 deg oven.
