Remove and set aside. In the same pan, sauté onions and bell peppers until soft. Add Trader Joe’s curry sauce and a splash of water or coconut milk if you want it creamier. Return cod to the pan, cover, and simmer on low for 6–8 minutes until the fish flakes. Serve with jasmine rice or cauliflower rice, and top with fresh cilantro and a squeeze of lemon Street Chicken Tacos with Guacamole & Pico Ingredients: 1 lb chicken breast, chopped 1 tbsp taco seasoning (or chili powder, cumin, garlic, salt) Corn tortillas For guac: 1 avocado, lime juice, sea salt For pico: Diced tomato, red onion, cilantro, jalapeño, lime juice, sea salt Instructions: Season chicken and cook in a skillet until golden and cooked through. For guacamole, mash avocado with lime juice and salt. For pico, mix all ingredients in a bowl and let sit for 10 min to marinate. Warm tortillas, then layer with chicken, a scoop of guac, and fresh pico. Optional: Add a sprinkle of cotija cheese or a dash of hot sauce for extra flavor. Simple Sweet Potato & Egg Breakfast Ingredients: 1 medium sweet potato, sliced 2 eggs Olive oil Salt, pepper Handful of arugula or spinach for a side salad (optional) Instructions: boil sweet potato cubes with salt soft. Cook eggs to your liking (fried, poached, or scrambled). Serve with sweet potatoes. Drizzle with maple syrup and a dash of allspice. CocoJune Yogurt Bowl with Berries Ingredients: 1 cup CocoJune coconut yogurt Fresh strawberries, sliced Fresh blackberries Chia seeds or hemp hearts (optional) Drizzle of honey or maple syrup Instructions: Add CocoJune to a bowl. Top with fresh berries. Drizzle lightly with honey or real maple syrup if you like a hint of sweetness.
