Hello friends, Heidi here from Rain Country. God is good all the time. In this video I’m sharing how I make a simple, from-scratch caramel sauce with just three ingredients: 1 1/2 cups cane sugar (I prefer organic blonde cane sugar), 8 oz butter, and 3/4 cup whipping cream. It’s fairly easy, but I don’t call it “super easy” because you do need to stay right on top of it—your heat setting matters, and you don’t want to burn the sugar. I walk you through what to watch for as the sugar clumps up (totally normal), melts down, and turns that familiar caramel color. I also show you the practical homestead side of it: use a heavy-bottom pan with plenty of headspace because it can bubble up when you add butter and cream, and don’t pour hot caramel into a cold jar (it can crack). I explain why I prefer a solid stainless steel serving spoon over a whisk or slotted spoon, and I give you my timing estimates—about 15 minutes for the sugar, plus a few more to get the butter fully blended, and roughly 30 minutes total. Once it’s made, I share some of my favorite ways to use it: drizzled over apple pie, stirred into coffee as a treat, over popcorn, or on warm pancakes (especially apple-flavored pancakes). It’s a special-occasion kind of thing, and it uses ingredients most folks already have on hand.
