Hello friends, Heidi here from Rain Country. God is good all the time. In this video I put together a list of 25 cheap meals I make on a regular basis—mostly easy, and definitely flexible. A big part of what keeps these meals affordable is how I handle the meat: I’m usually using leftover turkey or chicken, stretching a beef roast into multiple dishes, or relying on ground beef because it can go a long way. None of these are in any special order—just a solid list to spark ideas. I cover everything from coal cannon, fried rice, mac and cheese from scratch, and bone broth soup (often using my own dehydrated vegetables), to turkey “alla king,” chicken Alfredo, pot pies, chili, meatloaf, tamale pie, enchiladas, tacos, burritos, tuna noodle casserole (usually with home-canned salmon), spring rolls with homemade wraps, pizza, and even ravioli when I have extra time. The big takeaway is that once you learn a few bases—like a simple white sauce, homemade tortillas, and using your pantry/dehydrator—you can rotate flavors (Italian, Mexican, basic herb soup) and turn one roast into three or four meals, plus broth from the bones.
