I cooked these Barbecue Beef Ribs Hot And Fast on my Offset Smoker. Rather than cooking these Beef Ribs at the standard 225 to 250 degrees I cooked these at around 315 degrees. I have started Smoking Beef at higher temperatures lately and I am liking the results. One of the concerns I hear about Smoking Beef at higher temperatures is the lack of Smoke Flavor. I have never had an issue with under Smoked Meat cooking above 300 degrees. I was hoping to cook these Ribs to an internal temperature of 207 to 208 degrees as an experiment because I saw someone else cook Beef Ribs to that temperature, so I wanted to give it a try. I didn't get there in this cook because I was going to lose daylight and wanted to wrap the cook up. I did get to the standard 200 to 205 all things considered.
