You can't get much more tender than this 48 Hour Sous Vide Roast Beef. The Beef Roast that I used was a Sirloin Tip Roast, but any type of Beef Roast would work. I think that I would reserve going 48 hours for more tough cuts of beef like Brisket or Bottom Round. For Sirloin Tip Roast I think a good time would be closer to 24 to 30 hours because it is a more tender cut of Beef. The seasoning I used was a blend of salt, pepper and garlic (30% white Pepper, 30% black pepper 20% garlic and 20% salt roughly) I happened to have this seasoning on hand, but use whatever seasoning you like. Sous Vide Cooking is a perfect way to cook meat without much thought. Once you get it in the water bath, just let the immersion circulator do it's thing, and there is nothing else to think about until your meat has cooked for the duration set. Searing the meat off whether you use a skillet, grill or torch is a very fast process.
