After trying incredible smoked turkey across Texas (Goldee’s, Franklin Barbecue, Terry Black’s, Style Switch, Sam Jones), you all told us: “You HAVE to smoke a turkey for Thanksgiving!” So this year, we took the plunge. We used a British turkey crown (what Americans would call a turkey breast roast) and followed Aaron Franklin’s smoked turkey brine — and YES, we brined it for 2 full days. Then we smoked it low-and-slow on our Franklin Backyard Offset in our brand-new BBQ shelter. No spritzing. No opening the lid except one early rotation. Wrapped at 3 hours. Finished with butter. Rested for carryover safety. And finally… blowtorched the skin to try to get that perfect finish. This is the juiciest, smokiest turkey breast we’ve ever had in the UK — and it shocked us just how different it is from the dry turkey we grew up with.
