Medium or short grain rice. 2 cups. water 2 cups whole milk 1 cup sugar 3. egg yolks 1/2 oz orange and rind 1 TBSP. butter 1 tsp vanilla cinnamon 1. Pre heat the oven to 300 F. 2. Add 1 TBSP of butter to a warm pot; melt and mix in the rice. Add the water add salt and bring to a boil-cover. Put in the oven at pre heated to 300 F for about 20 minutes 3. In a seperate pot heat the milk. Add the sugar, rind, and vanilla. Simmer for 5 minutes. 4. Take the rice out of the oven and pour the milk mixture over the rice. Simmer the mixture for about 15 minutes. After 15 minutes taste. If you want the rice to be softer, at this point you could add 1/4 cup of milk or water and cook for an additional 5-10 minutes. 5. Remove the rind from the rice. 6. whisk the egg yolks with a TBSP of milk or water. Temper the egg yolks by adding 1 TBSP of hot rice while stirring. Repeat 2 times for a total of 3 TBSP of hot rice mixed in the the yolks. 7. Stir the yolk rice mixture into the pot of rice. Stir until well incorporated. 8. Pour into a large dish. 9. Can be served warm or cold. Sprinkle the top with 1-2 tsp of cinnamon.
