A tradition dish from the Portuguese Madeira Island. 2 pounds pork shoulder or pork butt 2 tsp salt 1 cup red or white wine 1 cup red or white wine vinegar 10 garlic cloves 2 tsp thyme 2 tsp black pepper 1 tsp dried red pepper flakes 6 bay leaves 1/4 cup olive oil (for marinade) 1/4 cup olive oil for frying 1 TBSP oregano 1. chop garlic, herbs, 2. In a ceramic or glass container mix all the ingredients: wine, vinegar, olive oil herbs, garlic salt, pepper and bay leaf pieces. 3. Marinate the pork from 3-7 days ( mix the pork 2- times a day) 4. Put the pork and marinade in a pan and braise for about 15-20 minutes 5. Take out the cooked marinade and reserve in a separate bowl to be used for dipping bread or tossing with cooked potatoes 6. Add a little olive oil to the pan with the pork. Brown the pork until crispy- about 15 minutes 7. If the cooked dipping marinade is too strong in flavor you can dilute it with some water.
