Soak the salt cod for 24 hours changing the water 4 to 6 times 2. Remove any skin and bones from the cod, shred the cod into .5 -1 inch pieces 3. Slice the onions. Peel and slice the potatoes 4.Sauté the onions over medium heat for about 10 minutes until limp and translucent 5. Add the sliced potatoes to the pan. 6. Add the milk and spices; cook for about 15 minutes. 7. Add the bacalhau cook for an additional 15 minutes until potatoes are tender. 8. Taste add more salt if needed. 1/4 to 1/2 teaspoon. 9. Make the roux with 1 tablespoon of flour and 1 tablespoon of butter 10. stir the roux into the mixture. Cook for additional 5 minutes to allow time for the sauce to thicken. 11. Remove the pan from the heat and allow to cool for 10 minutes 11. Whisk the cream and egg together and add to the mixture. 12. Transfer to a baking casserole. Bake for 20-30 minutes at 350 F. (or until the internal temperature reaches 165 F.) 13. Add 1/4 tsp of olive oil or butter to a pan and Sauté the tomatoes i for about five minutes add a dash of pepper and salt 14. Mix the bread crumbs and cheese together. Sprinkle on top of the Casserole. Cook under the Broiler for 2-10 minutes until the top is golden. 15.
