VERY BEST VEGAN LENTIL SOUP | Lentils, Potatoes, and Vegan Sausage

In today's video, Jill shows you how to make a savory and rich flavored Lentil, Potato, and Sausage Soup in the Instant Pot. This soup can be easily made stovetop! It's DELICIOUS. Jill's Lentil, Potato, and Sausage Soup INGREDIENTS 1 tbsp olive oil 3 cloves garlic, 1/2 medium onion, chopped 1 large carrot, chopped in approx. 1” chunks 1 rib celery, chopped 3 yellow potatoes, cut in approx. 1” chunks 2 bay leaves 2 tbsp tomato paste 2 large teaspoons “Better than Bouillon” vegetable base (or use 1 cup of broth from the 4 cups that are in the soup) 1 cup green/brown lentils 1/2 tsp black pepper 1 teaspoon red pepper flakes (optional) 4 cups water ½ Cup “Impossible” ground savory sausage (optional). I browned about ¾-1 cup of it on the stovetop, crumbling it as it browned, then I drained it really well. I let it cool and then put aside in the fridge until I needed to add it to the soup. INSTRUCTIONS: Set Instant Pot on “Saute” mode Heat oil Instant Pot Add onion, carrots, potatoes, and celery. Saute for 1 minute. Add the garlic, red pepper flakes, black pepper, and bay leaves. Saute for about 2 minutes, and stir occasionally to prevent burning Add in the tomato paste, vegetable base, and lentils. Then, add the four cups of water. Cover pot with lid, making sure the vent is closed. Set on “Manual Mode.” Cook for 6 minutes. Be sure to allow Instant Pot to come down with the Natural Release mode. After opening the lid, stir the soup. At this point, you can add the sausage if you are choosing to add it. Let heat in the soup for approximately 20-30 minutes. Check for salt and add to taste.
