Tender, moist, plant based stuffed bell peppers made with Gardein "Ground Beef" -- DELICIOUS! And, a perfect portioned recipe for two. Easily increased to serve a family. RECIPE FOR JILL'S STUFFED BELL PEPPERS 2 large bell peppers, (remove top of peppers, remove seeds and large membrane) 2 cups Gardein B'ef Crumbles 1 1/4 cup cooked rice (I used basmati) 1 small onion, finely chopped 2 cloves garlic, minced 1 tablespoon olive oil 3/4 cup to 1 cup tomato sauce Salt and pepper to taste Shredded plant based cheese, if desired In a large fry pan heat up the olive oil over medium heat. Sautee the onion until translucent. Add chopped garlic. Add the Gardein and begin to warm it up/defrost it. Add the cooked rice and stir well to combine. Heat this mixture well. Add the tomato sauce. Stir to combine. Set aside. Scoop the filling into the prepared peppers. Pack somewhat firmly but don't overstuff. Instant Pot Instructions: I set the steaming rack in the bottom of the instant pot. I added 1 cup of water. Put the peppers on top of the rack. Then add a small "tent" of aluminum foil to the tops of the peppers so the condensation of the slow cooking will not drip on the peppers. Set the Instant Pot on slow cooking function, on low setting. My peppers were cooked done in 2 1/2 hours. Do check on them to make sure they are not over cooked. Once cooked, remove peppers from IP. If you are adding cheese, place the peppers on an oven/broil proof pan. Set the broiler on high. Add the cheese to the tops of the peppers.
