In today’s video Jill shows you how to make the most delicious crispy, great for dunking Cranberry Orange Biscotti, with chopped pecans. Vegan too! Jill’s Cranberry Orange Biscotti (with pecans) November 22, 2024 3 ¼ cups All Purpose Flour (I use unbleached but all-purpose is just fine) 1 Tablespoon Baking Powder ¾ Teaspoon salt ⅔ cup Vegan Stick Butter (don’t use the soft tub style) 1 ⅓ cups Granulated Sugar 1 teaspoon vanilla extract 2 tablespoons orange juice concentrate ½ cup non-dairy milk (I used soy milk) ½ cup finely chopped pecans (you could any nut you’d like) 2/3 cup dried cranberries Preheat oven to 350 f. The oven rack should be in the middle position of the oven. You’ll need a large baking sheet. Line with parchment paper or a silicon mat. In a large bowl add the flour, baking powder, and salt. Set aside. In a mixer add the sugar and butter. Mix really well until combined and softened. Add the vanilla and orange juice concentrate. Mix well to work the flavorings into the sugar/butter mixture. Add the flour, baking soda, and salt to the sugar/butter mixture. Mix well on medium speed until thoroughly . The dough will be crumbly at this point. Add the soy milk and beat on medium speed until the dough comes together and looks like cookie dough. Now add the chopped pecans and cranberries. On low speed, combine the cranberries and pecans into the dough as evenly as you can. Remove the dough from the mixer and work the dough into a ball. Cut the ball in half and form the dough pieces into flattened logs. The dough should be about ¾” to 1”. Place the logs on to the cookie sheet. Leave a good amount of room between them as they will spread. Bake for 30 minutes. Remove from oven and COOL COMPLETELY. With a serrated knife cut the cookie logs on the diagonal in about 1” width. You can adjust the width of the cookie if you like. Return to the oven and bake approximately 10 minutes. Remove the pan from the oven and turn the cookies over. Return the pan to the oven and bake another 10 minutes. Personally, we like a crisper cookie (for dunking in coffee!) so I baked mine about 13 minutes on each side so they turn out as we like them. If you want a softer cookie, bake about 8 minutes, turn the cookies and bake another 8 minutes. Remove the cookies from the oven and cool.
