You can watch my entire FALL PLAYLIST for all my fall recipes: https://youtube.com/playlist?list=PL8wJzaywvvSUr4tSJ0wYdkY2oPfMR9pyy 🎃 Pumpkin Oatmeal Cookies Ingredients 2 Cups flour, all-purpose or unbleached white 2 Cups old-fashioned oats (quick oats will work as well) 1 Tsp Baking Soda 1 1/4 Tsp Cinnamon ½ Tsp Pumpkin Spice ¼ Tsp Nutmeg 1/2 Tsp. Salt 1 cup vegan margarine (sticks), softened 3/4 cup White Granulated Sugar 1 cup Brown sugar, packed 1 cup canned pumpkin (not pumpkin pie filling) *See notes at bottom of recipe. 1 1/2 tsp. vanilla extract 3/4 Cup Pecans (or your favorite nut) You could also add ¾ cup chocolate chips, or ¾ cup raisins, or dried cranberries or a mixture of your favs. 1 Flax Egg (1 tablespoon ground flax seed with 2 ½ tablespoon water mixed very well. Let it sit for 10 minutes to allow it to thicken) Instructions Preheat oven to 350 degrees. Spray cookie sheets with non-stick cooking spray, or use a Silpat type mat, or parchment paper In a medium bowl, combine flour, oats, baking soda, cinnamon and salt. Set aside. In a mixer bowl (you can also do this recipe by hand in a bowl with a spoon. It works just time) Beat the vegan margarine and both sugars until creamy and smooth. Add flax egg, pumpkin and vanilla, beat until combined. Add the dry ingredients. Mix until just combined. Do not over-mix. Stir in nuts, chocolate chips, or raisins, or your preferred items or you can leave out) Using a small scoop or a tablespoon, drop dough onto cookie sheet. I like to pat the cookie dough to flatten it a bit before baking. Bake about 14-16 minutes or until lightly browned. Cool on baking sheet for five minutes, then remove to cooling rack. (These cookies actually improve as they rest.) *Note regarding pumpkin: TIP: For a chewier cookie, place the measured-out pumpkin into a paper towel lined colander or sieve and let it drain for about 30 minutes. This will remove some of the excess moisture. They when the recipe calls for the addition of the pumpkin, just scrap it into the mixing bowl (without the paper towels).
