This is a recipe I used to make in my old cooking style. I decided to update it with all plant-based ingredients. It's really good but I still have a little homework to do before it's perfected. You don't have to add any oils for frying -- just use a dash of a cooking spray and/or water saute. It's also gluten free. RECIPE: Millet Cakes 2 cups cooked millet (see link below for my video on how to make millet) 1 carrot, finely diced 1/2 onion, finely diced 1 stalk of celery, finely diced 1/2 bell pepper, finely diced (I did all of these in my food processor -- each vegetable chopped individually) 2 packed cups baby spinach, chopped 1 flax egg (1 tbls ground flax seed w/3 tbls water) I used "Just Eggs" 1 1/2 teaspoon dill weed (you can pick any herb you might like instead) 1/2 cup to 3/4 cup garbanzo flour salt & pepper to taste. Saute the diced vegetables over medium heat. You can add a bit of oil for this or water-saute. Once they are softened, add the chopped spinach and cook to release a lot of the moisture -- about 5 minutes on medium heat. Remove from heat and allow to cool completely. In mixing bowl add the cooked millet, (use one cup of the veggie mix.), cooked vegetables, the dill weed, and the "egg" and stir well. Begin adding the garbanzo flour and keep adding it by tablespoons until you see the mixture becoming tight enough to form patties. The patties might be slightly tacky but easy to move from hand to hand. I made 7 patties out of this mix. If you like, you can make them thinner or smaller. Heat a fry pan over medium heat. Add a teaspoon of oil if you want or a bit of cooking spray. Brown the patties well on both sides. While these are browning, pre-heat your oven to 350. Transfer the browned patties to a cookie sheet and bake in the over for approximately 15-20 minutes depending on how thick your patties are. Show my Channel a Little Love!
