This soup, with lots of wild rice and mushrooms is so delicious! It is finished with a creamy vegan white sauce. It's cooked in the Instant Pot and is super easy to make. The recipe is printed below with some notations that might be helpful. WILD RICE AND MUSHROOM SOUP – VEGAN August 15, 2020 A Note about the Salt in this Recipe: We both thought this soup was fairly salty, but still delicious. I have decreased the seasoning which has been reflected in the recipe below. Also, it’s best to try to find a broth that is salt-free or low-sodium. I used the No-Chicken Better Than Bouillon, which I love, but it can be salty. You might try a low-sodium veggie stock or just use less of the BTB. That is what I’ll do next time – just use less of the stock base. You can always adjust the seasonings after the soup is ready to serve. **I’ve used the term “diced” for the chopping of the carrots, celery, and onion. I thought it would be helpful to give the definition of “diced” because it’s different than “chopped.” I found this definition: "A medium dice calls for cutting ingredients into squares with 1/2-inch sides. If a recipe specifies a dice without a modifier (e.g., “diced tomatoes,” without elaborating as to whether they should be small, medium, or large), the medium dice is what would be used." Soup Ingredients 6 cups vegetable stock (or chicken stock) 1 cup uncooked wild rice (It would as work well with ¾ cup) 8 ounces small white or crimini mushrooms, sliced 4 cloves garlic, minced 2 ribs of celery, diced 1 small yellow onion, diced 2 medium sized carrots, peeled and diced 1 small yellow onion, diced 2 good-sized handfuls of kale, torn into small bite-sized pieces. Remove the thick stems and veins that run through the leaves. This process will make the kale much more enjoyable to eat. 2 small bay leaves 3/4 tablespoon Old Bay seasoning Cream Mixture: 3 tablespoons vegan margarine 1/4 cup all-purpose flour (I used unbleached white) 1 1/2 cups plant milk (I used unsweetened soy milk) Salt & Black Pepper to taste HOW TO MAKE! Start the Soup: Combine vegetable stock, wild rice, mushrooms, garlic, carrots, celery, onion, bay leaf and Old Bay in your an Instant Pot or the pressure cooker of your choosing. Stir briefly to combine. Cover and make sure the vent it is on closed or “Sealing.” Cook on manual (high pressure) for 25 minutes. Once the soup is cooked, let the Instant Pot go through the “natural release” process. Remove lid and discard the bay leaf. Start the Cream Sauce: (you can do this step while the Instant Pot is doing it’s Natural Release.) In a medium sized saucepan, melt the margarine over medium-high heat until melted and bubbling. Whisk in the flour until combined, and cook for a good one minute – whisking all the while. Gradually add in the milk, and whisk until combined. Hopefully you’ll not get lumps. Switch to a stirring spoon and continue to cook, stirring often (we don’t want it to burn to the bottom of the pot, right?) until the mixture comes to a simmer and has thickened. It should be on the thicker side. Finish the Soup: Add the cream sauce and kale to the soup, stirring to combine. Now you can adjust your seasoning with salt and pepper. I turned the Instant Pot onto the slow cooker mode and let the soup heat up for about 10 minutes. This allows the kale to cook a bit and get the soup good and hot. It’s a winner!
