WHAT I USED TO COOK THIS RECIPE: from my Amazon Affiliate Store Mini Spatulas: https://amzn.to/3gqkaPz Pyrex Clear Glass Bowl Set: https://amzn.to/30oorxn Disposal Gloves: https://amzn.to/31e9KfR Tovolo Scooper/Spreader: https://amzn.to/2DxNiWA VitaMix 5200: https://amzn.to/3gr4Ouq Portable Induction Cooktop: https://amzn.to/2XlbcLZ RECIPE: BLACK BEAN BURGERS (vegan) Ingredients 1 1/2 flax egg (1 1/2 tablespoon ground flax seed plus 4 1/2 cool tablespoons water) 1/2 yellow onion, finely diced 2 green onions, sliced thinly 3 cloves garlic, minced 1 medium to large carrot, shredded 1 3/4 cup black beans (or a 15 oz can, drained and rinsed) Mashed but leaving some whole beans* 1/2 to 1 cup oat flour (I ground rolled oats in the Vitamix and didn't grind it smooth but left a little texture of the rolled oats) 1 teaspoon cumin ½ teaspoon garlic powder 1 1/4 teaspoon chili powder 1/2 teaspoon paprika 1/4 teaspoon cayenne (optional) 1/2 teaspoon chipotle powder (you could use smoked paprika if you don't have Chilpotle powder) ½ teaspoon salt Freshly ground black pepper Instructions Mix the ground flax seed and water and mix until well combined. Set aside for about 10 minutes to allow it to become a thick slurry. Saute the vegetables in a fry pan. I water-sauteed so I could save a bit of oil but you are welcome to use oil to saute. It will take about 10 minutes to get the vegetables soft. No need to brown them. Transfer to a large bowl and stir in the mashed beans, the spices, and salt & pepper. Then add the flax seed egg and about 1/3 cup of the oat flour. Mix everything together. If the mixture still seems a bit too wet, gradually add more oat flour until you end up with a nice mixture that is easy to form into patties and doesn't stick to your hands. See my video. It should make 4 nice-sized patties. Heat a fry pan and add about 2 teaspoons of oil or give it a good spray of "Pam". Add the patties to the fry pan and cook on medium heat until browned. Flip and brown the other side. If you want to finish them in the oven, heat the oven to 350 F and bake for approximately 20 minutes. If you decide to cook them on stove top, reduce heat to low and cook until firm in the center.
