Mushroom & Rice Pilaf | An EASY Instant Pot Recipe!

In today's video, Jill shows you how to make some yummy Mushroom & Rice Pilaf. Fragrant with thyme, garlic, and white wine. And, it's an Instant Pot recipe! Here's the recipe: Instant Pot Mushroom and Rice Pilaf Ingredients 1 cup basmati rice – rinsed and drained 1 cup veggie or chicken broth. (Water could also be used.) 2 cups sliced button mushrooms 3/4 cup thawed frozen peas 1 cup finely chopped onion 3-4 cloves minced garlic 1 ½ tablespoon olive oil ¼ cup white wine Salt & Pepper to taste ½ teaspoon red chili flakes ½ teaspoon thyme Approx. 3 tablespoon chopped parsley. Instructions Rinse the rice well. Drain well. Set Aside. Set the Instant Pot on “Saute”. Add oil and when the oil becomes moderately hot, add the onion. Saute until the onions become translucent. Add the minced garlic. Combine. Add the sliced mushrooms and saute for 2 minutes. Stirring as needed to prevent sticking. Deglaze the pot with the white wine. If not using wine, pour in the broth or water, and de-glaze the pot very well so that there are no bits and crumbs stuck at the bottom of the pot. Add the broth, rice and seasonings to the pot and mix well with onions and mushrooms. Cancel the “Saute” function. Close the lid of the pot and make sure the valve is sealed. Pressure cook for 4 mins. Once the cooking cycle is over, let the pot natural release until the pressure has completely left the pot. Open the lid carefully and add the thawed peas and parsley. Stir gently to incorporate. Let sit for about 10 minutes to allow the peas to get hot. Gently fluff the rice with a fork. Before serving, you can add some grated parmesan to the rice.
