Line a baking sheet with parchment paper or silicon mats. Set aside. Make the flaxseed egg: 1 tablespoon flaxseed meal with 2 ½ tablespoons water. In a small bowl, mix the two together. Let sit approximately 5-10 minutes until mixture becomes a thick slurry-like gel. Add to recipe as called for. 1 1/4 cups all-purpose flour ½ tsp. baking soda 1 tsp ground cinnamon ¼ tsp. ground nutmeg 1/8 tsp. ground ginger ½ cup (1 stick) vegan margarine, softened 6 Tablespoons brown sugar, tightly packed 1/4 cup granulated sugar **1 flax seed egg 2 ¼ tsp. vanilla extract 3 Tablespoons milk of choice 1/2 cup nut of choice, chopped 1 cup finely shredded carrots In a small mixing bowl, whisk together the all-purpose flour, spices, and baking soda. Set aside. Using a handheld mixer on medium-high speed, mix the margarine until light and fluffy. This could also be done with a bowl and spoon. Add the granulated and brown sugars to the margarine and continue to mix until well creamed together. On low speed, add the vanilla, and flaxseed egg. With a spoon, add the flour mixture and combine until just mixed together. If need be, add the milk to moisten the dough. Now add the shredded carrots and chopped nuts to the batter until they are just combined. (You no longer need the mixer if you have been using one.) Chill for one hour or until dough has firmed up. Using a 1” cookie scoop, scoop the cookie batter onto the prepared cookie sheet, spacing the cookies 2 inches apart. Bake for 10 to 12 minutes. Allow the cookies to completely cool. Ice with the glaze if preferred. See recipe below. Don’t over-bake.
