The Ultimate Classic Apple Crisp INGREDIENTS: Filling About 9 cups of apples. (about six medium-sized apples.) I used a combination of Honey Crisp, Fuji, and one Granny Smith. 1/4 cup apple cider or apple juice ½ cup brown sugar, depending on the sweetness or tartness of your apples. If using all Granny Smith I’d use ¾ cup brown sugar 2 tablespoons melted butter 1 ¼ teaspoon vanilla extract 1 3/4 teaspoon cinnamon Scant 1/4 teaspoon nutmeg 1/4 teaspoon ginger 2 tablespoons unbleached or all-purpose flour 1/4 teaspoon salt ½ cup dried cranberries Topping 3/4 cup unbleached or all-purpose flour 1/2 cup old-fashioned oats. You can use quick-cooking if you’d like 1/4 teaspoon salt 2/3 cup brown sugar, packed (You could use ½ white and ½ half brown) 1 ½ teaspoon cinnamon 3/4 teaspoon baking powder 9 tablespoons cold butter, cut into small cubes (approx.. 1/2” x ½) 1/2 cup diced pecans or walnuts, optional (I used pecans) Instructions Preheat your oven to 350°F. Grease a 8” x 8” or 9" x 9" square bake pan. I used a 9” glass pie pan. It was great! PREPARE THE APPLES: Peel and slice the apples about 1/4" thick. Toss them with the remaining filling ingredients, and pour them evenly into the baking pan. Pat them down well. MAKE THE TOPPING: Whisk together the flour, oats, salt, sugar, cinnamon, and baking powder. Add the cold butter, working it in to make an unevenly crumbly mixture. Stir in the nuts, if you're using them. Spread the topping evenly over the apples BAKE: Place your apple crisp on an aluminum-lined baking sheet (to avoid spill over). Bake for approximately 60 minutes. Check the apple crisp about 50 minutes into baking. Use a sharp knife and pierce one of the apple slices. Apples should be tender but not mushy. The crisp should be all bubbly around the edges of the pan, and the top will be a nice golden brown. Remove the crisp from the oven, and allow it to cool until it is warm-ish. It might be hard to resist but it will firm up a bit as it cools. It will reheat nicely. Serve it with ice cream or whipped cream. It is so delicious. A perfect apple crisp! Is there too much left? It freezes very nicely. Once cold (I put mine in the fridge to really firm it up), you can either wrap it in plastic wrap and place in a freezer bag and then into the freezer. If you know you’ll be eating it soon --- just place the servings into a plastic freezer container and then into the freezer. Defrost in the fridge. Place into a oven safe container or dish. Preheat oven to 350 degrees F. Place foil over container and bake for approximately 20 minutes until hot. The last 5 minutes you can remove the foil to help crisp up the topping.
