Moist and fragrant with nutmeg and sherry -- this is a cake you will enjoy making and serving. Easy to make with store bought cake mix, instant pudding, and a few items from your pantry. It is delicious! It comes from my mother's recipe file box. I've been making this cake since the mid-1960s. The recipe is down below. Mother’s Holiday Sherry Cake Oven should be pre-heated to 350 degrees F. The oven rack should be in the center of the oven. Oil and flour the inside of a Bundt pan. (I used a 10 cup pan) 1 - 15 oz. package yellow cake mix (any brand will work) * 1 - 3.5 oz. vanilla instant pudding mix (any brand will work) 4 eggs ¾ cup vegetable oil (I used canola) ¾ cup sherry (dry, medium, or cream) 1 teaspoon nutmeg Combine dry ingredients in a large mixing bowl. Mix quickly to combine. Add the sherry and oil. Beat to combine. Add the eggs one at a time. After all the eggs are added, mix the cake batter for 5 minutes. Pour batter into the prepared Bundt pan. Tap lightly on the counter to deflate some of the bubbles that may be at the top of the cake batter. Bake for approximately 40-45 minutes or until the center of the cake is completely baked and no wet batter is left. Use the toothpick test. Let cool in pan for 15 minutes. Invert cake onto a wire cooling rack. Cool completely then sprinkle with powdered before serving. (I find that if I wrap the cake with plastic wrap and then aluminum foil and let it mellow for 1-2 days, the cake flavor improves. But you don’t have to wait!) *We've also made this cake with lemon instant pudding mix. Switch out the sherry for white wine.
