German Broetchen Rolls -- Around the World in 80 Breads Series

In today's video, the third in the Around the World in 80 Breads, we travel to Germany. Jill introduces us to the light and oh-so-delicious Broetchen roll. Broetchen – German Bakery Rolls Ingredients 500 grams – or 4 ¼ cups bread flour (all purpose flour is fine as well) 330 ml – or 1 1/3 cups very warm water 2 3/4 teaspoons rapid rise or instant yeast 1 teaspoon sugar 1 teaspoon salt 1 tablespoon veggie oil (I used avocado oil) Instructions Place bread flour into the bowl of a mixer or a large bowl. Add sugar, and yeast. Mix well to combine. Add the water. Mix to incorporate the water as best you can. It will be on the dry side. Let the mixture stand for 10 minutes. Add salt and oil. On a mixer with a dough hook – Knead for about 5 minutes If kneading by hand – knead for about 10 minutes Shape the dough to a ball and place it in a greased bowl. Turn it over so that it’s completely coated. Cover the bowl with plastic wrap. Let rise for about two hours or until it has doubled in size. When the dough has doubled in size, punch it down to release the air and transfer it on a lightly dusted working surface. Divide the dough into 10 equal pieces. The total dough weighed about 30.3 oz. I divided the dough into approximately 3 oz pieces. Shape the dough into nice round balls (rolls). Arrange the rolls on a baking sheet lined with a parchment paper. Be sure to leave about 2”-3” of space between each roll to allow for the rolls to expand. Cover loosely with plastic wrap and let rise for another 30 minutes at room temperature. Preheat oven to 385 F. After the second rise, lightly brush the buns with water. Then dust them with flour and using a sharp knife or lame, cut a cross on the top of each roll. I sprinkled half of the buns with sesame seeds. To add more crispiness to the rolls, place a metal pan in the bottom of your oven. Add water to the pan. This will create steam and enable the roll crust to crisp up as the rolls bake. Bake for about 25 minutes or until lightly golden brown. Cool on a wire rack. These are amazing! So light and fluffy. We made sandwiches with them – YUM!!!
