In today's video Jill teaches you how to make an easy to make, simply delicious quick bread filled with pumpkin, zucchini, and walnuts. Vegan, of course! The recipe is listed below: PUMPKIN ZUCCHINI BREAD Jill 4 Today, September, 2022 1 3/4 cup flour (I used unbleached all purpose flour. You could use whole wheat if you prefer) 1 ½ teaspoon baking powder ¾ teaspoon baking soda ¼ teaspoon salt ½ teaspoon nutmeg ¼ teaspoon powdered ginger 1 1/4 teaspoon cinnamon 1 cup (before removing excess water) grated zucchini 1 cup pureed pumpkin (not pumpkin pie mix) 1/3 avocado oil, or other veggie oil of choice ½ cup plant milk (I use soy milk) 2 teaspoons apple cider vinegar 1/2 cup granulated sugar ¼ cup unsweetened applesauce 2 teaspoons vanilla extract ½ cup chopped walnuts (If you prefer, add raisins instead of nuts) Preheat oven to 350 degrees F. Place oven rack in center of oven. Oil an 8 x 5” loaf pan. Set Aside (even with a non-stick pan, I do oil it) In a small bowl, add the apple cider vinegar and milk together. Stir to combine. This will make a “buttermilk” like mixture. Set aside. Grate the zucchini. It should be a medium grate. Wrap the shredded zucchini in a kitchen towel, or in a cotton produce bag and then squeeze to remove the excess water. Set aside for now. In a large mixing bowl add the flour, salt, baking powder, baking soda, salt, cinnamon, ginger, and nutmeg. Mix well to combine. Add the zucchini to the dry ingredients and mix with a spoon or fork until the zucchini shreds are distributed and coated in the flour mixture. Do the same with the chopped nuts. In a separate bowl, whisk together the pumpkin, oil, “buttermilk,” applesauce, sugar, and vanilla. Making a well in the center of the dry ingredients (which now includes the zucchini and nuts), pour in the pumpkin mixture, and gently fold together until all of the flour has been incorporated. Do not overmix. Bake for 45-50 minutes or until a toothpick inserted into the center of the bread comes out clean. If it is still a bit doughy, bake for another 2-3 minutes and check again. (Mine took 55 minutes) Set the pan of bread on cooling rack for 30 minutes. Turn bread out on cooling rack to cool at least 30 minutes before cutting. Enjoy the first day. Refrigerate or freeze the remaining bread (if there is any left!).
