Easy Pasta Salad with A Mexican Twist

In today's video Jill shows how to make a pasta salad with a Mexican twist. Made with many items that may already be in your refrigerator! Dressed in a simple and tasty vinaigrette, you'll have this salad put together in no time. Pasta Salad: 4 oz. rotini pasta 1 1/2 cup kidney beans Approx. 1/2 each of: Chopped green pepper Chopped cucumber Sliced black olives 1/4 cup orange pepper, finely diced 1-2 cups finely cut kale Shredded cheddar cheese as garnish Cook pasta in boiling, salted water for approximately 12 minutes. Drain. Place hot pasta in colander and rinse with cold water. Chill in refrigerator before assembling salad. After assembling salad to your liking, dress lightly with the vinaigrette dressing. Chill for at least two hours prior to serving. Stir well before serving. Vinaigrette Dressing: 3 tablespoons olive oil 2 tablespoons rice wine vinegar 1 teaspoon dijon mustard 1 small clove of garlic, minced 1/4 teaspoon onion powder 1/4-1/2 teaspoon granulated sugar Salt and Pepper to taste Add all ingredients to a jar and shake well to combine. Refrigerate remaining dressing for up to 7 days.
