In today's video, Jill shows you how to make the MOST awesome Cowboy Cookies! Chewy texture, moist, sweet but not overly so, full of oats, chocolate chips, raisins, pecans, dried cranberries, and coconut. Excellent cookies! INGREDIENTS: 1 cup Earth Balance Sticks or other Vegan Stick-style margarine, softened 1 cup firmly packed brown sugar 1 cup granulated sugar 2 flax seed “eggs” (2 tablespoons flax seed meal, 5 tbsp water) 1 1/2 teaspoon vanilla 2 cups all-purpose flour 1/2 teaspoon baking soda 1/2 teaspoon salt 1/4 teaspoon baking powder 2 cups uncooked old fashioned rolled oats 1 1/4 cups semi-sweet vegan chocolate chips 2/3 cups chopped pecans (I lightly roasted mine first) 2/3 cup unsweetened finely shredded coconut 1/3 cup raisins 1/3 cup dried cranberries Instructions Pre-heat oven to 350°F. Have oven rack in the center position in the oven. Combine flour, baking soda, baking powder, salt, and oats in a small bowl. Set aside. In large bowl, mix Earth Balance, flax seed eggs, vanilla extract, and both sugars with electric mixer until light and creamy. (Stand mixer or hand mixer both work for this recipe. But you’ll need to add the flour, oatmeal, and the extras by hand with a spoon.) Add the dry mix into wet ingredients until well combined. Add chocolate chips, nuts, coconut, cranberries, and raisins; mix well. Drop dough by rounded tablespoonfuls onto ungreased cookie sheets or sheets lined with parchment paper, or silicon sheets. For a flatter style cookie, you can gently press cookie dough rounds to flatten. For a two inch cookie, bake approximately 10 to 12 minutes or until light golden brown. For the larger cookie, bake approximately 15-18 minutes. Cool 5 minutes on cookie sheets; remove to wire rack. Cool completely.
