Delicious Way To Serve Zucchini

Do you have zucchini still in the garden? Maybe in the grocery store? Try this zucchini pancake recipe. My mother would be so proud to know it's on YouTube. The recipe is listed down below Mom's Zucchini Pancakes Ingredients 1 ½ cups grated zucchini – squeezed dry 2-3 tablespoons finely chopped onion 2 eggs, beaten 6 tablespoons flour (more if needed to bring mixture together) 1/2 cup shredded cheddar cheese (parm, Swiss, Jack –any cheese you like) 1 teaspoon baking powder 3/4 teaspoon salt ½ teaspoon garlic powder ½ teaspoon freshly ground black pepper Unsalted butter and vegetable oil Instructions Place grated, drained zucchini into a large bowl. Add the onion, cheese, flour, baking powder and seasonings. With a spoon coat the ingredients with the flour. Stir in eggs. Combine well. Heat a large saute pan over medium heat. Add about ½ tablespoon butter and ½ tablespoon olive oil to pan. Heat so the butter is melted and both the oil and butter are hot. Stir to combine the two. Place large tablespoons of the mixture into the pan and flatten out to about ½”. Cook until golden brown on both sides. Drain on paper towels. Serve! Sour cream and chives make a wonderful condiment. Makes approximately 6 pancakes. Another great idea: Make the pancakes mini sized. Nice as a first course or appetizer.
